1 1/2 cups shredded part-skim mozzarella
1 oz full fat cream cheese
3/4 cup blanched almond flour (NOT MEAL)
1/4 tsp salt
2 Tbsp nutritional yeast
1/2 tsp garlic powder
2 tsp italian seasoning or pizza seasoning
1 large egg, beaten
Sauce, cheese and toppings of choice
Directions
- Add mozzarella and cream cheese to microwave bowl, set aside. Combine all dry ingredients in a separate bowl.
- Microwave the cheeses in 30 second intervals, stopping to mix each time until cheeses are blended together and mixture is smooth. Should take approximately 60-90 seconds, total.
- Stir the dry ingredients into the cheese mixture. The dry ingredients should be pre-measured as the cheese needs to be mixed quickly before it cools. If the dough gets to firm before combining is finished, microwave for an additional 30 seconds before continuing.
- Add beaten egg to dough mixture and knead in with a hard spatula or by hand. It may take up to a minute to get the egg to fully incorporate into the dough mixture. DO NOT microwave the dough once the egg has been added or it may cook the egg.
- Roll the dough out between two layers of parchment paper until it’s about 1/8″ thick. Remove top parchment and use bottom piece to bake pizza.
- Poke dough all over with a fork to help prevent bubbling and broil on high for 3-4 minutes or until crust starts to brown.
- Switch to baking and bake crust (without opening over) at 425F for about 4 minutes. Flip and bake another 4 minutes on the other side.
- Add sauce, cheese and toppings and bake 4-5 more minutes, until cheese is melted to your liking. Serve and enjoy!
