4 cups unsweetened coconut flakes
1 cup coconut oil
1 cup Lily’s chocolate chips
1/2 cup (1 stick) of butter
2 Tbsp powdered Swerve sweetener
1 tsp vanilla

- Melt the coconut oil and butter. Combine melted fats with shredded coconut in a medium bowl.
- Add vanilla, mix. Sprinkle with Swerve, mix again.
- Layer a piece of parchment paper in the bottom of a baking pan.
- Pour the mixture into the bottom ofthe pan and put it in the freezer for about 3 minutes.
- Melt the chocolate chips and pour over chilled coconut mixture, spreading evenly.
- Put the pan back in the freezer for 15-20 minutes until set.
- Use parchment paper to remove from pan and sit on a flat surface.
- Cut into 30 squares. Enjoy!
