Ingredients

  • 4 cups unsweetened coconut flakes

  • 1 cup coconut oil

  • 1 cup Lily’s chocolate chips

  • 1/2 cup (1 stick) of butter

  • 2 Tbsp powdered Swerve sweetener

  • 1 tsp vanilla

  • Melt the coconut oil and butter. Combine melted fats with shredded coconut in a medium bowl.
  • Add vanilla, mix. Sprinkle with Swerve, mix again.
  • Layer a piece of parchment paper in the bottom of a baking pan.
  • Pour the mixture into the bottom ofthe pan and put it in the freezer for about 3 minutes.
  • Melt the chocolate chips and pour over chilled coconut mixture, spreading evenly.
  • Put the pan back in the freezer for 15-20 minutes until set.
  • Use parchment paper to remove from pan and sit on a flat surface.
  • Cut into 30 squares. Enjoy!
